To make sugar syrup, stir sugar and 1/2 cup water over medium heat, without boiling, until sugar dissolves. Bring to a boil, reduce heat and simmer, uncovered, without stirring, for 5 mins. Let cool to room temperature.

To make passion fruit juice: Press passion fruit pulp through fine-mesh strainer. This should make 3/4 cup juice. Reserve 1 tbsp seeds.

Combine passion fruit juice, orange juice, passion fruit seeds, sugar syrup and egg whites. Transfer to a shallow freezer-proof container. Cover and freeze until firm. Break up sorbet then beat until combined. Return to container, cover and freeze until firm. Repeat 2 more times.

Transfer to a loaf pan, cover with foil and freeze until firm.

Serve scooped in glasses or cones.
