Mix the first 5 ingredients in a bowl.

Cut in the butter using a pastry blender or with hands until the mixture is a coarse meal.

Put the flour mixture in the fridge for 10 min and also preheat the oven to 400F.

Mix the buttermilk, parmesan and honey in a bowl.

Once the flour mixture is chilled, add the buttermilk mixture and stir until just combined.

Knead lightly (I live at 5000 ft so I often need a little extra buttermilk).

Turn onto a floured counter and roll out into a rectangle.

Lightly sprinkle flour and fold into thirds.

Repeat once more.

Roll out to about 3/4th inch thickness then cut using the 13/4 in round cutter.

Bake on a parchment lined baking sheet in the 400F oven for 13 minute.

If you're feeling indulgent, brush the top with melted garlic butter as soon as they're out of the oven.
