Mix the seasonings and sugar together.

This is the rub I used, but its quite flexible if you want to add cayenne pepper or anything else or a totally different rub altogether.

Preheat the oven to 400 degrees F

Clean up the chickenremove giblets, rinse etc.

Rub the rub of your choice all over the outside and under the skin trying not to rip the skin.

Open the beer can, drink a few large swallows.

Add any remaining rub you have to the beer.

Place the beer can in a metal pan with at least 2 inch sides.

Spray the can on the side with nonstick cooking spray.

You really dont want to skip this step or the chicken will stick!

Sit the chicken up on the beer can so that the can goes inside the chicken and balances on the beer can and the chickens two legs.

Bake the chicken at 400F for 30 minutes.

Then reduce the oven temp to 350F until the chicken is cooked (for my 4 pound chicken it took around 1 hour).

Cooked means at least 180F degrees internal temperature with a meat thermometer and delightfully crispy.

Remove the chicken from the oven and let it rest for about 15 minutes.

Now, you need to get the chicken off of the can.

If youre lucky, you can grab the whole chicken with some giant tongs and it will slide off.

If youre like me, you need to punch a hole in the bottom of the can and let the beer drain out into the baking pan.

Move the chicken somewhere to carve it and then use the tongs to grab the can and yank it out.
