Wash the butter beans and then soak them in a large bowl of water for 12 or more hours before cooking.

Boil the butter beans into plenty of water until tender.Then drain them and put them in a baking tray,

Preheat air oven to 160oC.

In another pan, slightly cook the onions and garlic slices in the extra virgin olive oil.Then add the carrots' slices, the pepper slices, the thinly sliced celery leaves, the finely chopped parsley, the chopped tomatos and all spices and cook until half tender.

Pour this mixture in the baking tray with the cooked butter beans and mix until everything looks well distributed.Add 1 glass of water and cover the tray with kitchen foil.

Cook covered for 1 1/2 hour.

Remove the kitchen foil for 5 minutes before turning off the oven.
