Our Family's Sweet Potato Croquettes

   Peel the sweet potato.

   Chop in small pieces and soak in water.

   Drain water and put in heatproof container, then cover with plastic wrap to microwave until soft.

   Heat some vegetable oil in a frying pan.

   Stir-fry pork and season with salt and pepper.

   Mash the sweet potatoes while hot.

   Combine with pork and mix well.

   Form into flat patties.

   Coat thinly with katakuriko.

    Dredge in beaten eggs and coat with panko.

    Deep-fry until golden brown.

    They should be done as soon as they're browned on the outside since the inside is already cooked.
