Our Family's Potato Salad with Crispy Bacon

   Peel the potatoes, cut them up and boil.

   When they have cooked through sprinkle them with a little salt, mash up roughly and leave to cool.

   Cut the bacon into 1 cm wide pieces, and cook in a frying pan with no oil added over low heat until crispy.

   Drain off the fat that comes out of the bacon.

   Slice the cucumber thinly, sprinkle with salt, and squeeze out well.

   Slice the onion very thinly and put into a bowl of water.

   Drain and squeeze out well.

   Crush the potatoes and mix in the bacon, onion and cucumber.

   Mix the mayonnaise in last.

    If it needs more salt add it at this time.

    This is a soup made with the boiling water from the potatoes.
