6 ounces uncooked orzo pasta
¾ teaspoon lemon zest
⅓ cup fresh lemon juice
1 tablespoon olive oil
1 tablespoon Dijon mustard
4 teaspoons honey
1 medium cucumber, seeded and chopped (1 1/4 cups)
2 Italian plum tomatoes, chopped
½ cup red onion, chopped
12 medium pitted ripe olives, halved
¼ cup chopped fresh mint leaves (optional)
¼ cup crumbled feta cheese

Cook orzo according to package directions.Drain and rinse with cold water.

In a small bowl, combine lemon zest, lemon juice, oil, mustard and honey.Whisk until well mixed.
