Ingredients: 2 qts water; 1 tbsp salt; 1 1/2 cups orzo; 1 tbsp extra virgin olive oil; 1 (5 oz) pkg long grain & wild rice with seasonings; 1 (3oz) pkg slivered almonds; 1/2 large red pepper, diced small; 1/2 large yellow pepper, diced small; 1/2 purple onion (diced small); 1/2 cup raisins or craisins; 1/4 cup finely chopped basil; 2 tbsp finely chopped fresh parsley; 4 oz (or more to taste) Greek Feta Yogurt Dressing (I buy Wegman's brand here in upstate NY); Salt and pepper to taste

2 qts water
1 tbsp salt
1 1/2 cups orzo
1 tbsp extra virgin olive oil
1 (5 oz) pkg long grain & wild rice with seasonings
1 (3oz) pkg slivered almonds
1/2 large red pepper, diced small
1/2 large yellow pepper, diced small
1/2 purple onion (diced small)
1/2 cup raisins or craisins
1/4 cup finely chopped basil
2 tbsp finely chopped fresh parsley
4 oz (or more to taste) Greek Feta Yogurt Dressing (I buy Wegman's brand here in upstate NY)
Salt and pepper to taste

In a large pot, bring water to a boil. Add the 1 tbsp salt and orzo. Cook until tender (per directions on box). Drain the orzo and immediately toss with 1 tbsp of olive oil. Cover and cool completely in the refrigerator, up to 24 hrs.

Prepare the long grain and wild rice according to package directions. Let cool.

Combine almonds, peppers, onion, raisins (craisins), basil, parsley, cooled orzo, cooled long grain and wild rice and Greek Feta Yogurt dressing.

Serve at room temperature (I prefer cold) in a large bowl, family style, or divide among individual serving plates.
