Sift flour into a large bowl. Add 1 tsp salt, sugar and yeast. Mix in olive oil and 1 2/3 cups warm water. Turn out onto a floured work surface and knead for 5-10 mins, until smooth and elastic. Mix in olives. Place in a greased bowl and sprinkle with a few drops of water. Cover with plastic wrap and let rest in a warm place for 1 hour.

Preheat oven to 400u00b0F. Grease and flour a baking tray.

Lightly knead dough then shape into 2 - 10 inch long loaves. Place on prepared tray, sprinkle with flour and cover with a tea towel. Let proof for 15 mins, until doubled in size, then bake for 20 mins. Reduce heat to 350u00b0F and bake for another 25-30 mins, until golden.
