Ingredients: 1 cup Olive oil; 3 lb Jumbo carrots chopped; 3 lb Yellow onion chopped; 2 tbsp Dried basil; 6 can Plum/chopped Italian style tomatoes; 3 quart Water; 1 lb Chicken base; 3 quart Heavy cream; 2 tbsp Salt; 1 tbsp Pepper

1 cup Olive oil
3 lb Jumbo carrots chopped
3 lb Yellow onion chopped
2 tbsp Dried basil
6 can Plum/chopped Italian style tomatoes
3 quart Water
1 lb Chicken base
3 quart Heavy cream
2 tbsp Salt
1 tbsp Pepper

In large pot heat oil on high for 2 min

Add onions, carrots, and basil and saute until onions are translucent and carrots are tender - about 25 min

Add tomatoes with their juice, water and chicken base.

Stir to dissolve chicken base and let simmer for 60 min.

Turn off heat and blend with a hand mixer until smooth - about 3-4 min on high speed.

Add cream, salt and pepper and stir in thoroughly.

Return to heat and let simmer for 6-8 min before serving.
