Ingredients: 1 1/4 cups buttermilk; 1 1/2 cups quick cooking rolled oats; 1 cup grated carrots; 1/3 cup butter or margarine, melted; 1/4 cup packed brown sugar; 2 eggs; 1 Tbsp. Magic Baking Powder; 1/2 tsp. salt; 3/4 cup raisins; 1 1/2 tsp. grated orange rind; 1 1/2 cups all-purpose flour; 1/4 cup granulated sugar

1 1/4 cups buttermilk
1 1/2 cups quick cooking rolled oats
1 cup grated carrots
1/3 cup butter or margarine, melted
1/4 cup packed brown sugar
2 eggs
1 Tbsp. Magic Baking Powder
1/2 tsp. salt
3/4 cup raisins
1 1/2 tsp. grated orange rind
1 1/2 cups all-purpose flour
1/4 cup granulated sugar

GREASE 12 large muffin tins or line with paper baking cups.

POUR buttermilk over oats in large bowl; stir to mix.

Let stand 5 minutes.

Stir in carrots, butter, brown sugar, eggs and orange rind.

MIX remaining ingredients in bowl; stir into oat mixture just until moistened.

Spoon into muffin cups, filling each to the top.

BAKE at 400F (200C) for about 20 minutes or until firm to the touch.

Cool in pan 5 minutes; remove muffins and cool on rack.

Store in airtight container.
