To make the pastry dough, sift flour and a pinch salt into a large bowl. Make a well in the center and add sugar, egg yolk and vanilla. Sprinkle with ground almonds. Add butter and mix until combined. Wrap in plastic wrap and chill for 30 mins.

Roll pastry out and use to line a 9 1/2 inch tart pan. Chill until firm then prick base all over with a fork.

To make the almond filling, cream butter and sugar until light and fluffy. Add almonds and lemon zest. Beat in egg a little at a time, adding cornstarch halfway through. Transfer to tart shell.

Push plum wedges into almond filling and sprinkle with sugar. Bake for 35 mins, until golden brown. Let cool for 10 mins then remove sides of tart pan. Heat red currant jelly gently to dissolve then brush over tart and let cool. Remove base of tart pan and serve.
