Peel and finely chop garlic, onion (small slices), and slice mushrooms. Slice tomatoes into 12ths and cube cheese. --> set aside.

Prepare 5QT water w/ 1 Tbsp Salt and bring to a boil. Cook pasta according to box (about 11 min at boiling, and breaking longer noodles to preference).

Meanwhile, brown sausage over med-high heat. Once the meat is browned, drain fat and pat meat dry. Add the onion, garlic, and S & P to the sausage, breaking apart the meat as it cooks thoroughly, add the mushrooms towards the end.

With the pasta and meat cooked, combine everything EXCEPT cheese and basil. Stir continuously until the spinach has cooked significantly down, and tomatoes have turned into a nice sauce for the noodles. Add the basil and cheese, and quickly combine together.

With the cheese still melting, serve and enjoy.
