1 large onion, thinly sliced
1 red bell pepper, diced
2 garlic cloves
3 cups chicken broth
¼ cup soy sauce
9 ounces frozen spinach
15 ounces chickpeas, drained & rinsed
13 ounces light coconut milk
1 teaspoon dried ginger
¼ cup cilantro, chopped

Coat the inside of a Dutch oven with spray oil.

Heat over medium high heat and cook chicken until light browned, about 8-10 minutes.

Remove chicken from pan and set aside.

Add onions, bell peppers, and garlic to pan and saute for just a few minutes until the ingredients are tender crisp.

Return the chicken to the pan and add the chicken broth and soy sauce.

Bring to a boil, reduce heat and simmer covered for about 15 minutes.

Add spinach, chickpeas, coconut milk and ginger.

Simmer for an additional 10 minutes or until heated through.
