Norwegian Wheat Bread(Norsk Hvetelbrod)

   Heat milk and butter to scalding.

   Pour in a large bowl and cool to lukewarm.

   Stir in yeast.

   Sift 7 cups flour, sugar, cardamom and salt and add to milk, mixing well.

   Add wheat germ. Turn dough onto floured board and knead in the other cup of flour, if needed.

   Place in buttered bowl and let rise to double.

   Punch down; let rest 15 minutes.

   Divide dough in half and shape into 2 loaves.

   Let rise to double and bake 30 to 40 minutes at 350u00b0.
