   Add the vegetable oil and ground beef to a large sauce pan and cook until the meat is brown and tender.

   Add carrots and cook another 5 minutes.

   Add the onion and any seasonings and cook until the onions are translucent.

   Add the tomatoes and chipotle peppers and cook for another 20 to 25 minutes.

   Serve over rice or mashed potatoes.
