Rinse clean plastic containers and lids with boiling water.

Dry thoroughly.

Use sharp knife to score peel on each orange into 4 pieces.

Remove peel; set aside.

Chop fruit; place in small bowl.

Trim and discard white membranes from peels.

Cut peels into thin strips.

Place 1-1/4 cups orange peel in medium saucepan.

Add water.

Bring to boil; cover.

Simmer on medium-low heat 15 min., stirring occasionally.

Remove from heat.

Add chopped oranges with their juices; mix well.

Measure 4 cups fruit mixture into separate bowl.

Stir in lemon juice.

Combine pectin and 1/4 cup sugar.

Gradually add to fruit mixture, mixing well after each addition.

Let stand 30 min., stirring frequently.

Add remaining sugar; stir 3 min.

Fill all containers immediately to within 1/2 inch of tops.

Wipe off top edges of containers; immediately cover with lids.

Let stand at room temperature 24 hours or until set.

Jam is now ready to use.

Store in refrigerator up to 3 weeks, or freeze extra containers up to 1 year.
