Crust: In a large bowl, mix the water, milk, brown sugar, salt and shortening with the kitchen aid mixer on low speed until fully combined.
-
2
Now add the corn meal, olive oil and yeast, and continue mixing for about a minute to combine everything together.
-
3
Let it rest for 5 minutes.
-
4
Youll start to smell the yeast (yum) and when is has combined with the sugar the yeast will rise.
-
5
Add the flour and mix the dough with your hands.
-
6
Turn the dough out onto a lightly floured surface and really knead that dough!
-
7
Id say for a good 8 to 10 minutes.
-
8
Form the dough into a ball and place it in a well oiled bowl in a warm place.
-
9
Let it rest for about an hour.
-
10
When ready, get your rolling pin out, add a bit of flour to the rolling pin and start shaping your dough.
-
11
I happen to come from a family who is Sicilian on one side (Irish, English and Italian).
-
12
Theres no other way in our opinion to shape the dough.
-
13
Toppings:
-
14
Honestly you can add whatever you like, but my family is partial to peppers, pepperoni and sausage.
-
15
Not just any sausage but ground Mild Gianelli Sausage.
-
16
Its local baby!
-
17
If you ever have the chance to have this sausage, then get it!
-
18
Youll never wanna go back to the stuff youve had before.
-
19
If you dont however have the Gianelli ground sausage, head for Jimmy Dean in the rolls.
-
20
Cook it up and have it ready in a bowl to add as a topping.
-
21
Now .
-
22
.
-
23
.
-
24
We New Yorkers never add the toppings under the sauce.
-
25
Its a sin... so dont do it!
-
26
Start with a GOOD sauce.
-
27
Dont buy the cheap stuff.
-
28
If ya want yummy... get the thick stuff.
-
29
Or make your own.
-
30
You cant ever go wrong with that.
-
31
Once the sauce has covered the dough add the mozzarella, then start adding the sausage, pepperoni and finally, add the peppers.
-
32
Theyre healthy man!
-
33
Bake at 400 degrees for 25-30 minutes or until golden.
