Combine all the dry ingredients in a mixing bowl. Then mix in the wet ingredients. Knead the dough on the counter. Oil the dough surface and the inside of the mixing bowl and seal the dough inside. Allow the dough rise for 1 hour in a warm place.

Make 12 fist sized balls from the dough. Flatten with your hand and pinch the corners. Reshape the dough into a smooth ball in your hands. Flatten with your hand again and coat the ball in flour. Roll out the dough into an oblong circle to a 1/8 inch thickness (Be sure to roll out all the naan pieces before cooking them to allow the dough to rest and rise further ensuring you a fluffy naan. In the meanwhile, heat your girdle on medium/high heat.)

When cooking the naan, enclose the naan in the girdle with a clear glass lid. This allows the heat to surround the dough ensuring a fluffier naan. When you see bubbles on the top of the naan, flip and cook for an additional 30-60 seconds. Generously apply ghee/butter and serve warm.
