Heatup the oil in a large frying pan.

Add the shallots and fry for 1 minute then add the crushed garlic for another minute

Add the mushrooms and mix well cook for 2 minutes you may need yo add 2 more tblspoons of olive oil.

Add the Chorizo to the pan and mix cook for 2 minutes.

Add the Chicken pieces and mix well and cook for two minutes, if using uncooked chicken fry for about 8-10 minutes.

Make a well in the middle turn the heat full for a few secounds then pour the brandy in the middle let it boil fast for 2 mins then mix it all together

Then add the stock and stir and simmer for 5 mins

It should thicken,Add the cream and stir in well add the salt & pepper until its hot again.

Add to a serving dish and serve immediatley.
