1 ½ cups couscous or 1 ½ cups fine bulgur
1 medium zucchini, halved lengthwise and thinly sliced
1 medium tomatoes, chopped
½ cup raisins
⅓ cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
salt and black pepper
1 12 lbs ground beef
1 cup grated carrot (2 medium)
¼ cup chopped parsley
3 scallions, trimmed and thinly sliced
1 tablespoon tomato paste
1 teaspoon paprika
1 teaspoon ground cumin
½ teaspoon ground cinnamon

1.Place couscous in a large bowl and add 1 1/2 cups boiling water.

Cover and set aside for 5 minutes, then fluff with a fork.

2.Toss couscous with the zucchini, tomato, raisins, mint, 2 tablespoons oil, lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper.

3.In a large bowl, combine beef, carrots, parsley, scallions, tomato paste, paprika, cumin, cinnamon, 1 teaspoon salt, and 1/2 teaspoon pepper.

Make twelve 1/2-inch-thick patties.

4.Heat remaining oil in a nonstick skillet.

In batches, cook patties over medium heat, 3 to 4 minutes per side for medium-rare.
