2 Tablespoons Olive Oil

1 whole Red Bell Pepper, Seeded, Deveined And Chopped
2 whole Small To Medium Zucchini, Halved And Sliced
1 Tablespoon Hungarian Sweet (or Regular) Paprika
1 pinch Red Pepper Flakes

2 cups Tomatoes, Chopped
1/4 cups Green Onion Greens (scallions), Sliced
1 bunch Cilantro, Chopped
1 can (14 Oz. Can) Coconut Milk

Remove half of the vegetables to a bowl, then spread remaining vegetables in the pan to make a bed for the fish.

Place fish on top of the vegetables, then add back the previously removed vegetables to cover the fish.

Pour coconut milk over the fish and bring to a simmer.
