Ingredients: 3/4 cup butter softened; 1 1/4 cups caster sugar; 1 teaspoon vanilla essence; 4 medium eggs; 7/8 cup dark chocolate melted; 2 cups plain flour; 2 teaspoons baking powder; 7/8 cup cream cheese; 1 tablespoon double cream; 5 1/4 ounces nougat; 24 sugar small, eyes

1 1/4 cups caster sugar

4 medium eggs
7/8 cup dark chocolate melted
2 cups plain flour
2 teaspoons baking powder
7/8 cup cream cheese
1 tablespoon double cream
5 1/4 ounces nougat
24 sugar small, eyes

Preheat oven to 350u00b0F. Line a 12-cup muffin pan with paper liners. Cream butter, sugar, vanilla extract and a pinch of salt. Add eggs, 1 at a time, then fold in chocolate. Sift in flour and baking powder then fold in. Distribute between paper liners and bake for about 25 mins. Remove and let cool on a wire rack.

Meanwhile, mix cream cheese, cream and nougat then transfer to a piping bag. Remove cupcakes from liners, cut in 1/2 horizontally, fill with cream cheese frosting then sandwich back together. Decorate with sugar eyes and serve.
