Clean and cube the chicken.In a large pot add 2 tbsp of olive oil. On medium high heat cook the chicken adding salt & pepper to taste. When chicken is done cooking add the carrots and enough water to cover then boil on medium high for 15 minutes. Add potatoes, celery, onion and parsley. Add more water to cover. Boil until potatoes and carrots are soft. Do not over cook or potatoes will turn to mush. In a measuring cup add gravy packets a little bit of water. Beat with a fork until the gravy turns into a batter like mixture. They pour into pot and stir. Boil for 3 minutes then turn down to a simmer and stir more. Remove from heat and let cool 10-15 minutes. For a thicker gravy add flour or cornstarch.
