*** SOAK BEANS OVERNIGHT...

I go through them and remove any beans that look odd..... put in mixing bowl and cover with water and leave sit over night....

I have also put on to boil and let hard boil for 15 min....TURN OFF..... cover for an hour in the water... then pour the water off....

THIS CAN TAKE THE PLACE OF SOAKING THE BEANS....

***if using hamhocks put 1-2 in pressure cooker ADD 1/2 OF THE SALT, PEPPER, ONION.....and let cook for 50 min

after quick release... add soaked beans and garlic.... and the remainder of onion, salt and pepper... in the pc...AND OIL.... and set for 20 minutes....

u can add potato and celery cut in chunks....

cook until.pressure is built up.on Med/ high ... then turn down to Med.....and let cook for 60 min..... QUICK RELEASE... ONCE STEAM IS RELEASED CHECK BEANS FOR SOFTNESS AND ADJUST SALT AND PEPPER!!

**** my pc is electric so I set it for soup for 20 minutes...

put beans on and hard boil for 15 min.... turn off and cover in hot water...

pour off the water and cover beans with water... should be approximately 2 inches above the beans.... add 2 cups of diced ham... (about 8 cups of water for 1lb of beans)

add all the other ingredients... accept oil and diced potato...-.- let come to a boil..... then add oil....and turn down to med/ low

let cook for 1 hrs... check to make sure they don't go dry... add and cook diced potato last 30 min

put all ingredients in the crock pot (my crock pot is 6 qts) cover with about 8-10 cups of water... place all ingredients in the crock pot.

accept potatoes....

cook on high for 4 hrs... add potatoes and cook another hour...
