In large bowl, mix all ingredients until smooth. Lightly grease small frying pan. Place over low heat. Fill a large cooking spoon with batter and spread into thin layer in pan, filling in holes with extra batter. Cook for 30 seconds on each side, being careful not to fold or rip crepe while flipping.

Chill finished crepes in refrigerator until ready to prepare manicotti.

To prepare Manicotti:

Preheat oven to 350 degrees. Combine all filling ingredients in a large bowl and set aside. Line bottom of baking pan with a thin layer of tomato sauce and set aside. Fill each crepe with 1 tablespoon of mixture and top with a thin slice of mozzarella. Fold flaps of manicotti to form a tube. Place manicotti into baking pan with the flap side down. Top with sauce and grated parmesan. Bake at 350 degrees for 20-25 minutes.
