Ingredients: 2 envelopes unflavored gelatin; 1/2 c. cold water; 1 1/2 c. boiling water; 6 Tbsp. fresh lemon juice; 1 1/2 Tbsp. grated onion; 2 1/2 tsp. salt; dash of Tabasco sauce; 3 c. mashed avocado (3 large); 3/4 c. mayonnaise; seafood or chicken salad; cherry tomatoes

2 envelopes unflavored gelatin
1/2 c. cold water
1 1/2 c. boiling water
6 Tbsp. fresh lemon juice
1 1/2 Tbsp. grated onion
2 1/2 tsp. salt
dash of Tabasco sauce
3 c. mashed avocado (3 large)
3/4 c. mayonnaise
seafood or chicken salad
cherry tomatoes

Soften gelatin in cold water and dissolve in boiling water. Add lemon juice, onion and seasonings.

While gelatin mixture is still liquid, stir in avocado.

Fold in mayonnaise.

Pour into 10-inch ring mold and chill until firm.
