Mix butter, graham cracker crumbs (crushed Oreos would be divine as well) and sugar until thoroughly combined. Then press into a pan (pie or Springform will do) and bake in oven at 350 degrees F while preparing the rest of the cheesecake. I never really time this- just however long it takes to mix up the cheesecake batter. I would say 10-15 minutes would be plenty of time for the crust to get done.

While the crust cooks, mix up the heavy cream, sugar, egg, and cream cheese in stand mixer until fluffy and smooth.

Remove the crust from the oven and layer on the mint chocolate chips, which will begin to melt since the crust is still warm from the oven. Next, pour the cheesecake batter into your crust and bake for 20 minutes longer or until firm.

Drizzle with melted chocolate and garnish with left over chips! It's delicious, and great with coffee after dinner!
