Mini Coconut Tartlets And Orange Curd

   Preheat oven to 180 degrees Celsius.

   In a bowl, whisk the egg whites until foamy, with sugar and grated coconut. It may seem that the result is a somewhat loose dough, but it actually works.

   Place a small ball of dough in small silicone tartlet pans. Use your fingers to open a hole in the center, and press the dough against the sides of the pans.

   Place the pans on a baking tray, and bake for about 10 minutes.

   Remove from oven, and let cool in the molds.

   When cold, fill the center with orange curd. Refrigerate until serving.
