Ingredients: 2 slices bacon, diced; ¼ cup onion, diced; 1 teaspoon garlic, minced; 12 lb ground sirloin (can combine with ground turkey, chicken or pork); ¼ cup breadcrumbs, dry (panko nice); 2 tablespoons parsley, minced; ½ teaspoon paprika; ½ teaspoon kosher salt; ½ teaspoon black pepper; 1 egg, beaten

2 slices bacon, diced
¼ cup onion, diced
1 teaspoon garlic, minced
12 lb ground sirloin (can combine with ground turkey, chicken or pork)
¼ cup breadcrumbs, dry (panko nice)
2 tablespoons parsley, minced
½ teaspoon paprika
½ teaspoon kosher salt
½ teaspoon black pepper
1 egg, beaten

Preheat oven to 400F.

Use silpat in a baking pan with a lip or oil a broiler pan.

Cook bacon in a skillet until just starting to crisp, about 4 minutes.

Remove and set aside on a paper towel.

Leave 1 tbs dripping in skillet.

Saute onion in that skillet over medium heat until softened, about 3 minutes.

Add garlic and cook another minute.

Combine ground meat, bacon, onions, bread crumbs, parley, paprika, salt and pepper in a large bowl.

Stir in beaten egg.

Form into 1 inch meatballs and place on your prepared pan.

Bake until fully cooked, about 10 minutes.

If you want to store them, cool and place on a baking sheet and freeze.

Then transfer to an airtight container.
