skin the fava beans and the peas; heat a large skillet with 2 tblsp olive oil and the chopped onion (you could add some pancetta if you like, but i rather like it without it), add the fava beans first, sautee for a couple of minutes, then add the peas. Sautee for another two minutes, salt and pepper to taste, and cover with water. Water should be 1/2 inch above the peas and fava. Simmer for 40 minutes, tasting for salt and pepper.

Cuta artichokes in quarters and sautee them in remaining olive oil for about five minutes, until tender.

When the minestra will be done, after 40 minutes, add the artichokes to the soup, and sprinkle with chopped parsley and mint, and finish with a good pinch of freshly grated pepper, Very healty and delicious!
