Bring the wine, water, sugar, orange rind and star anise to the boil, simmer for 5 minutes.

Add the pears and return to the boil, then simmer a further 20 minutes until tender.

Remove pears and cover.

Simmer the remaining liquid until reduced by half.

Beat the butter and sugar until pale, then add the eggs, one at a time, beating well after each addition.

Fold in the sifted dry ingredients and the chocolate.

Spoon the mixture into 6 x 1/2 cup greased friand pans.

Bake at 180 degrees C for 12-15 minutes or until cooked through.

Turn out and allow to cool.
