Ingredients: 2 cups potatoes, cubed; 1 cup carrots, sliced; 1 cup celery, chopped; 2 cups ham, cooked and cubed; 2 tablespoons green pepper, chopped finely; 2 teaspoons onion, chopped; 1/4 cup cheddar cheese, shredded; 1/2 cup milk; 1/2 teaspoon salt; 1/4 teaspoon pepper; 1/2 cup soft bread crumbs

2 cups potatoes, cubed
1 cup carrots, sliced
1 cup celery, chopped
2 cups ham, cooked and cubed
2 tablespoons green pepper, chopped finely
2 teaspoons onion, chopped
1/4 cup cheddar cheese, shredded
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup soft bread crumbs

In a large saucepan, combine potatoes, carrots, and celery in small amount of water and cook until crisp tender. Drain and set aside.

Saute ham, green pepper, and onion in 3 Tablespoons margarine until ham is golden brown. Place ham mixture and vegetables into greased 2 quart casserole, cover, and set aside.

Melt 1 Tablespoon margarine in a small saucepan over low heat. Add 2 T flour and mix until smooth. Gradually add milk until thick and bubbly. Stir in cheese, salt, and pepper until sauce is slightly thickened. Pour sauce over ham and veggies and sprinkle bread crumbs over all Bake at 375 degrees for 25-35 minutes.
