Pierce at intervals with fork. Arrange in circle, 1-inch apart, on paper towels in microwave oven. Cook at 100% power for 16 minutes, turning potatoes over after 8 minutes.

Using teaspoon, carefully remove pulp, placing in mixing bowl. Set shells aside.

Add butter, sour cream, salt, pepper, 1/2 cup grated cheese, chives and bacon bits (to taste) to pulp.

Beat with electric mixer until smooth. Divide mixture evenly and spoon into shells.

Sprinkle tops with remaining cheese.
