Microwave Eggs Parmesan

   2 egg whites

   1 large eggs

   2 ounces smoked turkey, cut into small cubes

   1 tablespoon grated Parmesan

   Salt and freshly ground black pepper

   Several romaine lettuce leaves

   1 medium tomato, sliced

   Place 2 egg whites and 1 whole egg in a microwave-safe bowl about 7 inches in diameter.

   Add 2 tablespoons turkey, 1 tablespoon Parmesan and salt and pepper to taste.

    Whisk with a fork.

    Microwave on high 1 minute.

    Stir and microwave 30 seconds and stir.

    For drier eggs, microwave 30 seconds more.

    Arrange lettuce leaves on 2 plates and place tomato slices on top.

    Spoon eggs onto plate.

    Using the same bowl, repeat for second serving.
