Cut Yellow Squash crosswise into 1/8 inch thick slices, sprinkle with salt & black pepper to taste, toss in a bowl then set aside. In another bowl mix all the remaining dry Ingredients together and gradually add the cold water until you get a smooth consistency of a thick batter (like thick pancake batter)add more water if needed.

Heat 1 1/2 inch oil in a 10-inch heavy skillet until it reaches 375u00b0F.

Add Yellow squash slices one by one into the thick batter; let the excess batter drip off back in the bowl. Carefully Drop it in the oil. Do the same with the rest of the yellow squash until you have enough in the skillet but do not over crowd the heavy skillet. Cook each side for 1 1/2 minutes or until golden brown. Drain the deep fried Yellow squash on a paper towel.

Serve it right away with a Sweet Chili dipping sauce or Marinara sauce.
