Meatloaf Muffins

   Preheat oven to 350 degrees.

   In a bowl, combine first 6 ingredients, add salt, pepper, and onion powder to taste.

   Mix until well combined.

   Spray a standard muffin tin with cooking spray.

   Divide meat mixture into 6 evenly sized balls and place them in the muffin cups.

   Bake at 350 for 30-45 minutes or until internal temperature reaches 170 degrees.

   Serve hot.

   I like to serve mine with garlic mashed potatoes and gravy (check out my cookbook for that recipe) and green beans.
