Meatloaf Mash

   Preheat oven to 350 degrees.

   Heat olive oil in a medium saucepan over medium heat and saute peppers and onions unti just soft.

   Remove to a plate to cool.

   Create the glaze in it's own bowl.

   Combine kethcup, honey, and worcetershire sauce.

   In a seperate bowl, beat eggs and add torn bread.

   Let stand for 5 minutes.

   Stir in pepper, onions, fried onions, worcestershire sauce, and seasonings.

   Crumble meat over mixture and combine.

    Pack mixture into a well greased loaf pan.

    Lightly dust half of the glaze over loaf.

    Bake uncovered at 350 degrees for 35 minutes.

    Spoon the rest of the glaze over the loaf.

    Bake for another 10-20 miutes or until a meat thermometer reads 160 degrees.

    Let stand another 10 minutes before slicing.

    (If you desire you can sprinkle some more crispy fried onions over loaf before serving.
