For the meatloaf: Mix beef, egg, and panko together.

Place about half the mixture in cupcake tin wells (Ive also used silicone cups on a baking sheet).

Cut string cheese in quarters and place on top of meat, pressing down lightly, making sure not to push it down too far to the bottom.

Place remaining meat on top of each cupcake, sealing around the edges so that cheese doesnt ooze out.

Bake at 350 degrees F for about 3035 minutes, depending upon your preference.

During the last 5 minutes of baking, top with bbq sauce and put back into oven for the final 5 minutes.

For the mashed potato icing, I put my mashed potatoes into a pastry bag and pipe it on just like icing.
