Ingredients: 2 tbsp olive oil; 1 None onion, finely diced; 1 None red chili, deseeded and chopped; 1 None garlic clove, finely chopped; 1 tsp tomato puree; 14 oz can chopped tomatoes; 2 None bread slices, toasted; 10 oz ground beef; 2 tbsp chopped fresh basil, plus extra leaves to garnish; 1 tbsp mustard; 2 tbsp sunflower oil; 14 oz fresh spaghetti; 1 oz Parmesan shavings

2 tbsp olive oil
1 None onion, finely diced
1 None red chili, deseeded and chopped
1 None garlic clove, finely chopped
1 tsp tomato puree
14 oz can chopped tomatoes
2 None bread slices, toasted
10 oz ground beef
2 tbsp chopped fresh basil, plus extra leaves to garnish
1 tbsp mustard
2 tbsp sunflower oil
14 oz fresh spaghetti
1 oz Parmesan shavings

Heat the olive oil in a saucepan, add the onions and fry for 2-3 mins. Add the chili, garlic and tomato puree and continue to saute for a further 2-3 mins. Pour in the tomatoes then cover and simmer for 15-20 mins.

Soak the toast in cold water for 1-2 mins then squeeze out the excess liquid. Place in a bowl with the beef, basil and mustard then season and knead until fully combined. With wet hands, form the mixture into small meatballs.

Heat the sunflower oil in a frying pan and add the meatballs. Fry in batches for 5-8 mins until cooked through. Mix the meatballs and sauce together. Meanwhile, cook the spaghetti in a large pan of boiling, salted water for 2-3 mins until tender then drain. Mix the pasta into the sauce then divide between 4 bowls. Sprinkle with Parmesan shavings then serve garnished with basil.
