Meat Loaf Pinwheels

   Combine meat, crumbs, 1/2 of cheese, egg and salt.

   Mix lightly; pat out flat meat mixture to cover a 12 x 10-inch rectangle of foil.

   Combine rest of cheese, rice and parsley; spread over meat.

   Roll up, starting at narrow end.

   Wrap securely; refrigerate several hours (or overnight).

   Cut roll into 8 slices; place in a baking dish and bake at 350u00b0 for 30 minutes. Serves 8.
