Meat Enchiladas Recipe

   Combine enchilada sauce mix, tomato paste and water; stir to blend.

   Bring to a boil, stirring constantly.

   Reduce heat and simmer, uncovered for 15 min.

   Stir occasionally.

   Brown meat.

   Stir 1/2 c. sauce and cheese into meat; add in lowfat sour cream and chilies.

   Mix well.

   Dip each tortilla in warm oil or possibly cover tightly and hot in oven 10 min.

   Spread 1/2 c. sauce in bottom of 13x9 baking dish.

    Spread meat mix on tortillas, roll and place seam down in dish.

    Cover with remaining meat and sauce mix.

    Top with grated cheese.

    Cover dish with foil.

    Bake at 350 degrees for 25 to 30 min.
