1 3/4 cup Flour
1/2 cup White sugar
2 tsp Baking powder
1/8 tsp Salt
1 Egg
3/4 cup Vanilla soy milk
1/4 cup Cooking oil
1 tsp Vanilla exctract
1/2 cup Pecans
Streusel:
2 tbsp All-Pourpose flour
2 tbsp Brown sugar
1/8 tsp Cinnamon
1 1/2 tbsp Un-salted Butter

1. Preheat oven to 350 and grease pan.

2.In a medium mising bowl add flour, sugar, baking powder, salt. Mix well

3.In a small mixing bowl crack and stir the egg well until the yolk and white are mixed well.

4. Add soy milk, oil and vanilla to the egg mixture. Stir again.

5. Add the wet ingredients to the dry ingredients and mix for 20 seconds. (Mixture will not be perfecty smooth)

Mix in pecans

1. Mix the brown sugar, flour, and unsalted butter. Crush together with a pastry blender until the butter is crumbled with the rest of the ingredients of the streusel.

Pour the batter into a 9x5 loaf bread pan. Sprinkle streusel over the batter.
