["Special equipment needed: two 8-ounce mason jars or 6 ounce ramekins.", "1. Preheat oven to 350 F. Spray the mason jars or ramekins with cooking spray. Fill a loaf pan with warm water about 1 1/2"" up the side of the pan (or just 1/2"" up the sides if you are using ramekins).", "2. In a bowl, add egg white and sugar and whisk until combined. Add in vanilla, melted butter and pumpkin puree. Stir until incorporated. Add flour, baking powder,salt and spices, stirring until smooth.
