1 large yam, boiled, drained and mashed
4 eggs
1/4 cup small curd cottage cheese
4 ounces goat cheese, softened
1/8 cup butter, softened
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground nutmeg
4 green onions, sliced finely
1/4 red bell pepper, chopped finely
4 slices bacon, cooked crisply and crumbled

Preheat oven to 450 degrees.

Grease muffin tins.

Bring yams to a boil, reduce heat and cook until soft - 15-20 minutes.

Meanwhile, cook bacon until crisp, blot grease from bacon and crumble finely, set aside.

In a small bowl use a hand mixer to blend eggs, cottage cheese, goat cheese, butter, salt, pepper and nutmeg.
