Beat eggs, milk, onion, bell pepper and Breakfast Seasoning in large bowl with wire whisk. Melt 1 tablespoon of the butter in large skillet on medium-low heat. Add egg mixture; cook and stir 3 to 4 minutes or until soft curds form. Remove eggs from pan; keep warm.

Melt remaining 1 tablespoon butter and lightly brush one side of each tortilla. For each quesadilla, place 1 tortilla, buttered side down, on a plate. Sprinkle evenly with 1/4 cup of the cheese. Top with 1/2 cup scrambled eggs and additional 1/4 cup cheese. Cover with a second tortilla, buttered side up.

Place quesadilla in skillet on medium heat. Cook until cheese begins to melt and bottom tortilla is golden brown. Gently turn quesadilla; cook 1 to 2 minutes longer or until cheese is melted. Repeat for the remaining 3 quesadillas.

Cut quesadillas into wedges. Serve with salsa, sour cream and guacamole, if desired.
