Slowly add sugar. Add oil. Then add flour. Add the rest of the ingredients.
3
Let the mixture sit for at least an hour.

Preheat oven to 350
5
Form the mixture into two loaves on baking pan lined with parchment paper or non-stick aluminum foil. Sprinkle with cinnamon-sugar and bake for 30 minutes.

Remove from oven and with a sharp knife, cut the loaves in slices.
7
Place the pieces one side down on the baking pan and bake for 10 minutes. Repeat with the other side for an additional 10 minutes.

Notes:
9
Any vegetable oil will work. I like cooking with olive oil
10
If you want a crispier, biscotti-like texture, bake each side an additional 5 minutes
11
An easy way to form the loaves is by using old-fashioned metal ice trays without the inserts. Line them with parchment paper or foil and the loaves will easily lift out for slicing.
