Ingredients: 1/4 c. butter; 5 Tbsp. flour; 1 c. milk; 1 tsp. salt; dash of paprika; 1/2 lb. grated American cheese; 1 1/2 c. cooked macaroni; 2 Tbsp. chopped pimiento; 1 Tbsp. chopped parsley; 1 tsp. grated onion; fine cracker crumbs; 1 egg; 1 Tbsp. water

1/4 c. butter
5 Tbsp. flour
1 c. milk
1 tsp. salt
dash of paprika
1/2 lb. grated American cheese
1 1/2 c. cooked macaroni
2 Tbsp. chopped pimiento
1 Tbsp. chopped parsley
1 tsp. grated onion
fine cracker crumbs
1 egg
1 Tbsp. water

Melt butter in top of double boiler.

Add flour and blend. Add milk, salt and paprika.

Cook and stir over boiling water until smooth and thickened.

Add cheese; stir until blended.

Add macaroni, pimiento, parsley and onion.

Turn into a well-greased large flat loaf pan.

Chill until firm.

Cut into 2-inch squares and dip into crumbs, then beaten egg with water and then again in crumbs.

Fry in hot fat until a golden brown.

Garnish with parsley.
