Pre-heat the oven to 190 degrees C.

Heat the oil in a frying pan and cook the onion and garlic until softened. Add the tomatoes and basil and simmer, uncovered, for 15 minutes.

Defrost the spinach (a minute or two in the microwave) and press out as much water as possible. Place the cottage cheese and parmensan in a bowl and stir in the spinach and nutmeg.

Spread 1/2 of the cheese and spinach mix over an oven-proof dish (I use a bread tin); top with a cheet of lasagne and 1/2 of the tomato sauce. Repeat to use all the ingredients, finishing with mozarella cheese (either thinly slized or grated, your preference).

Bake for 30 minutes on 190 C, covering with foil halfway through cooking time if necessary.
