Lovely Chocolate Truffles for Valentine's Day

   Break up the chocolate.

   Put the cream into a saucepan and stop the heat just before it starts to boil.

   Melt the chocolate in it and then add the rum.

   Mix it over a bowl of ice water.

   When it starts to harden, drop 1 tablespoon at a time of the mixture onto a tray.

   Let them chill in the fridge for 10 minutes.

   Roll them into nice balls and dust with cocoa.

   Let them harden in the fridge for over 2 hours.
